I'm Berry Passionate!
Summer months provide wonderful opportunities for BBQs, picnics, and gatherings~

STRAWBERRIES WITH BALSAMIC VINEGAR AND MINT
A lovely and light accompaniment for a "ladies lunch" or picnic!
Ingredients:
3 lbs. fresh California Strawberries, hulled and quartered
4 Tbs. balsamic vinegar
5 Tbs. sugar
2 Tbs. fresh mint leaves, chopped fine
Preparation:
Place the strawberries in a large bowl and add remaining ingredients over top. Stir well to incorporate flavors. Marinate for at least 1 hour, stirring well every 20 minutes.
The vinegar, berry juice, and sugar will combine to create a thick syrup. Try them alone or on top of vanilla ice cream. Garnish with a mint sprig!

mmm. that sounds good, i'll try that dressing out. i'm always looking for a good salad dressing and strawberries are so versatile
hey I noticed your blog, how come there are no pics of the family? I would love to see them. Hard to believe your "little" ones are so big! Keep working on that kick back and couples only time!

A fresh way to mix up your Salsa.
Strawberry Salsa
INGREDIENTS
1 pint fresh strawberries, sliced
4 roma (plum) tomatoes, seeded and chopped
1 jalapeno peppers, seeded and minced
2 cloves garlic, minced
1 lime, juiced
1 tablespoon olive oil
DIRECTIONS
In a large bowl, combine strawberries, tomatoes, chile peppers, garlic, lime juice and oil. Toss all together to mix and coat. Cover dish and refrigerate for 2 hours to chill. Ready to serve!
its really good, try it, not the same old boring tomato salsa, eventhough i love salsa, this is a newer and better way to incorporate strawberries.
